Recently I've setup KVM on Ubuntu Server on VPS. It will launch separate VNC server for each virtual machine automatically (on port 5900, 5901...), so you will be able to connect to these VNCs directly or through SSH tunnel to accomplish the guest's installation. Also you will be able to connect to the remote KVM server via a local Virtual machine manager (that is the GUI of KVM)... I would advice you to spent 1-2 days to install KVM on a local computer or on a local virtual machine (VM on VM) and gain some basic experience with it.
