I can open the grub page and run memtest, but that is it.

Probably better to install Lubuntu or one of the other lightweight versions since very lightweight system. See askubuntu.com/questions/715407/… & are you booting installer in BIOS or UEFI boot mode? Acer Cloudbook shows screen for selecting trust, shows typical screens for all Acer bernaerts.dyndns.org/linux/74-ubuntu/…
